Cathay Pacific has announced a new menu for some long-haul flights, curating what it calls “Hong Kong Flavours.” The airline has been in collaboration with Michelin-starred Hong Kong restaurant Duddell's for a year now, and the latest offerings are part of that partnership.

First and business class passengers on some of Cathay Pacific’s long-haul flights out of Hong Kong can expect refreshed menus designed in collaboration with Michelin-star restaurant Duddell’s.

The airline first collaborated with the restaurant in February 2023 and is furthering that association with a newly designed menu for premium guests. Cathay Pacific General Manager Customer Experience and Design Vivian Lo, commented,

“Hong Kong Flavours’ is a stalwart in the Cathay Pacific dining proposition, as it not only showcases some of our home city's most beloved and iconic dishes, but also represents our ambition to connect Hong Kong with the world through these culinary creations. We are thrilled to deepen our partnership with Duddell’s, who shares our passion for food and commitment to elevating Hong Kong’s culinary scene, and no detail has been spared in the curation of these new inflight menus.”

What’s on offer?

First class

The three-course menu offers exquisite appetizers, main course, and dessert options. First class passengers can start with an appetizer of crystal pork terrine with black vinegar. Made with pork knuckles that have been cured, boiled, pressed, and thinly sliced, then topped with a sweet and tangy sauce made with aged Chinese black vinegar, it is inspired by a specialty dish from Zhenjiang in China’s Jiangsu province.

For the main course, passengers can go for sautéed abalone and chicken with Sichuan pepper and crispy greens, which takes its inspiration from a traditional Chiu Chow dish. It is accompanied by delicate steamed winter melon rolls and deliciously fragrant salted fish and vegetable rice. There are also steamed cod fillets with Chinese ham and shiitake mushrooms that offer an interesting texture and combination of flavors.

For dessert, guests will be offered black sesame tart with tofu ice cream, inspired by the popular Chinese sweet black sesame soup. It is a nutty and toasty black sesame mousse in shortcrust pastry accompanied by light and creamy tofu ice cream.

Business class

Passengers in business class can start their meal with Sichuan-style poached chicken with sesame and chili sauce, also known as "saliva chicken.” This lightly poached chicken is laced with a rich and complex sauce infused with sesame and red chili.

For the main course, guests can choose between braised pork ribs with hawthorn sauce and green apples or braised beef ribs with port wine. The first option includes tender pieces of fried pork ribs coated in a sweet, tangy, and luscious sauce made with fresh hawthorn berries and a touch of apple cider vinegar. The second one is essentially beef ribs that are slowly cooked with port and tomato paste. It also includes celery and carrots for a crunchy texture.

For dessert, business class passengers will be offered tofu pudding with red beans, which the airline describes as “light and dreamy dessert consists of silky smooth pudding boasting a deep, rich aroma of soy beans, topped with soft and sweet azuki red beans sourced from Hokkaido.”
