KLM has unveiled its new KLM World Business Class menu on flights from Amsterdam. The menu was created by Dutch chef Jonnie Boer and sommelier Thérèse Boer of restaurant De Librije, whose previous menus went down a treat with KLM passengers. Business class passengers can expect a new menu of starters and mains every quarter.

Dutch carrier KLM has launched its new long-haul business class menu created by long-time culinary partners Jonnie and Thérèse Boer. The new menu will be available in World Business Class on KLM flights out of Amsterdam as of this week.

Main dishes on offer include baked salmon, Chicken thigh in a star anise gravy and a selection of local delicacies. Meals are accompanied by a selection of wines picked out by sommelier Thérèse Boer.

KLM said,

"KLM is proud to serve again dishes designed by the Netherlands’ best chef Jonnie Boer. Previous collaboration with Jonnie and Thérèse Boer was much appreciated by KLM’s customers. KLM is looking forward to again offering Jonnie’s contemporary style and Thérèse’s expertise in wines and hospitality."

The airline first cooperated with Jonnie Boer back in 2010, with his menus earning acclaim from business class travelers. Jonnie and Thérèse run the world-renowned Restaurant De Librije in Zwolle and have worked with KLM on multiple menus over the years.

The menu in detail

The new KLM business class menu will be available until July 2022, when a fresh selection of starters and mains will be rolled out.

From the starter menu:

  • Tartelette filled with creamy apple-potato salad and green asparagus
  • A selection of appetizers, including grilled zucchini in tahini cream, chickpea salad, garlic feta and nut salad

The main courses:

  • A selection of delicacies: a traditional vegetarian stew with roasted bell peppers, compote of braised onion and tomato served with mashed potato
  • Baked salmon with broccolini, roasted tomatoes and couscous
  • Chicken thigh in a star anise gravy served with braised green cabbage and potato puree

Famed chef Jonnie Boer will create a brand-new menu every three months. Additionally, there will be a range of vegetarian options on offer.

KLM adds that the menu meets its sustainability goals given, "Jonnie Boer’s use of recognizable, fresh, local ingredients and balanced use of animal protein, as well as KLM’s carefully chosen local suppliers."

Accompanying wines include Masi Tupungato – Passo Doble – 2019- Mendoza, Argentina (until April 10th), and Domaine de Grangeneuve L’Initiale H – 2020 – Rhône – France (from April 10th).

New tableware coming in the summer

KLM is set to introduce brand-new tableware in World Business Class during the second half of 2022 in line with its sustainability mission.

The tableware, created by Dutch designer and art director Marcel Wanders, includes a sustainable tray and crockery. The chinaware is made from bone china, and the tray is polypropylene.
